For those who like having starters on a meal, this is a creative recipe that will delight any tomato and fish lover… Tomatoes stuffed with cod!
The budget for this recipe is not high and the preparation lasts around 40 minutes.
Ingredients (4 people)
200g of cod fish
2 garlic cloves
2 tablespoons of olive oil
1 thick slice of broa or corn bread
Heat the oven and set the temperature to 180ºC.
Wash the tomatoes without removing the top leafe and cut the top of each one. Remove the seeds and pulp from inside and put aside.
In a pan, put the garlic and the chopped onion with olive oil and let Sauté. When the onion starts getting well braised, almost transparent, add the shredded cod. Season with pepper and salt.
Now it is time to add the tomato pulp to the codfish, then cook it for a while. Add the parsley and the Broa crumb. If you don’t have broa, you can substitute it for corn bread. Stir the mixture with a wooden spoon and cook over low heat for 5 minutes.
In the meanwhile, anoint a tray with margarine and place the tomatoes. Sprinkle them with salt and pepper.
With a spoon, stuff the tomatoes with the cod, closing them with the tops.
Bake it for 15-20 minutes.
You can serve the tomatoes adorned with a black olive on top.
